My original Christmas order of “Barbarie” duck through a French deli supplier fell through. As far as I know Hong Kong Customs didn’t let it in. Something to do with bird flu, not Corvid, I don’t know. So I was offered a capon instead. Marvellous. But what exactly is a capon? I asked Twitter.

It’s a cap on, a cape on, a coupon, a cock and a hen.

And almost immediately I got a response. Good old Twitter.

So I could expect, a very big neutered hen, a castrated rooster, a small chicken.  They can be a bit tough, old and scrawny but also very fine, tender and juicy eating. A cockerel that can’t and a rooster without pronouns that self-identifies as a chook. A cock with no balls (do birdies have balls? Apparently one internal teste.)

Peasants doff them and it’s what Batman wears, but it’s not a robin.

Some have them every year, some had fond childhood memories of devouring capon, some acknowledge that they’re not available in the UK because of animal welfare issues. Some are force-fed, which made me feel sad.

What I received in the end was a guinea fowl. Anyone know how to cook a guinea fowl? I’ll ask Twitter.
