MsJ was on holiday over Lunar New Year last week so I was cooking for a change. I’d managed to find a poulet de Bresse in the posh supermarket in town and cooked this delicious one dish in my Le Creuset buffet casserole on Sunday. It does take a bit longer than you’d think so allow plenty of time.
You really do need the two lemons to cut the oily richness of the chicken. I didn’t add chillis but I think their zing would have made this even more delicious. If anything, it’s a bit orzo-heavy but since I’m not particularly carb-phobic, I don’t mind that. Do be careful with your portions if you’re watching your calorie intake through. It’s easy to eat a lot of this. Better still enjoy this but pare your calories away elsewhere.
It was delicious comfort food at a time of great need.
